Day 16

Officially, I am on the second half of my vegan journey.  Day 16, Playas!!

This was the start of my 2nd week of BootCamp.  I think the time off over the weekend took a little bit of a toll on me today!  But alas... I lived to fight another day...  At home, I drank the typical Vega protein shake afterwards.  Feeling a little sluggish, 3 cups of coffee, black.  Don't judge, you health freaks.  For lunch, Peanut butter sandwich sans the jelly and a granola bar.

For dinner, a very important person who Eric Goldberg knows made me dinner.

Acorn Squash, baked in the oven.  They call them acorns, but here they look like turtle shells!
Stuffed Acorn Squash (with mushroom, brown rice pilaf) and roasted  broccoli -very good!
  This was a great meal.  Acorn squash-never even heard of it, let alone ever eaten it, I think!  Skipped the butter and used peanut oil and obviously, no cheese. Also, added some dried cranberries.   Can I also say, I have become a huge fan of the roasted vegetable!  Broccoli, cauliflower, brussel sprouts... you name it.  This is an awesome way to get your vegetables and better for you than french fries.
